That looks like WAY too much effort for a single strawberry dessert. I don't want to know how much that little thing costs...Also, why put all that effort into making the strawberry shape candy shell if they were going to break it and put the strawberry mixture over it anyway? -_-
Well I'm sure they make several batches running at once normally but in the video only a single for demonstration purposes.

For those of you who don't get, if you've never had molecular gastronomy before then it's easy to dismiss it. I'm obsessed with molecular gastronomy, sure it is pricey, not only does it mess with your head the moment you bite into something you think is a strawberry with the surprise that it is not but the flavors completely change in the most amazing form. And to answer the question above, they broke the strawberry to show you what's inside in the video. This is art. if you don't care about food or art then go back to your regular life and have a cheeseburger...
